About our ... BottargaBottarga is the kind of food that inspires passion from its converts. Referred to by some as the caviar of the Mediterranean, bottarga was invented by the Phoenicians who colonised Sardinia in the 8th Century BC.
Bottarga muggine is skillfully made from the roe of the female grey mullet fish, which is dried, salted and pressed into blocks.
In Sardinia it is most commonly either thinly sliced for antispasti and bruschetta or grated onto pasta or risotto (as you would with parmesan) for an intense salty yet nutty taste of the sea.
